I've been experimenting. This is the BEST ice cream base out there - never too hard or too soft! I have used a Cuisinart Ice Cream Maker and a KitchenAid ice cream maker attachment for my mixer. Both are fantastic!

Chocolate: Use base ingredients, adding 2 tbsp. of sifted unsweetened cocoa powder to the milk and sugar mixture before heating. Add 2 ounces of chopped semisweet chocolate after milk and sugar are removed from heat. Stir until melted; continue with base ice cream instructions.
Use ice cream base directions 1 - 5. Cool for at least 5 hours in refrigerator. Peel and slice 1 & 1/2 cups of fresh chilled peaches. Put in food processor and process for about 20 to 30 seconds to desired size. Stir in 2 cups of cream and 1 tsp. vanilla. Churn in your ice cream maker and freeze for 2 to 3 hours before serving.
Mocha Latte': Use base ingredients, adding 2 tbsp. sifted unsweetened cocoa powder, 2 tbsp. ground coffee, and 1/2 tsp. cinnamon to milk and sugar mixture while heating. Strain well in a wire mesh strainer. Continue with ice cream base instructions.
Lemon: Zest 3 lemons, reserving juice of one lemon. Combine zest only with the 3/4 cup sugar in a food processor or blender. Follow base ice cream instructions, but stir in lemon juice right before adding mixture to the ice cream maker.
Salted Caramel (Dulce de Leche):
Reduce sugar to 1/4 cup sugar. Add 1 cup Dulce de Leche or thick caramel sauce the milk and sugar in Step #1 of ice cream base instructions. Continue with base instructions to make.
